  2. This is my first sorbet! This is also my second attempt at using alcohol (besides vanilla extract). Since I didn’t want this sorbet to be icy, I knew I had to use salt and alcohol to raise the anti-freezing power. I looked up different berry deserts and decided to use the same amount of salt per 100 grams of the recipe as in Twizzlers.

    For the alcohol, I didn’t want this recipe to be alcoholic, so I kept this under 1 proof (0.5% alcohol by volume), which is legally non-alcoholic. There’s less alcohol in this recipe than in sourdough bread.

    I was afraid it would be overwhelming, but the salt and Jack Daniel’s are very subtle, very much in the background. When had several people try this, they said they couldn’t taste the alcohol and could just barely notice the salt. I could taste the flavor of the Jack Daniel’s only in the back and sides of my mouth and on the tip of my tongue.

    The flavor is great, very strong berry flavor, obviously, not too sweet, not boozy, not too salty, really nice overall.

    If you don’t want to use whiskey, you can use any 80 proof alcohol, or you can just use vanilla extract.
