TL;dr: No access to smoker or bbq, how can I cook this slab?

Partner picked up 2kgs of this beef which came labelled as "short-" (remainder was cut off)

ChatGPT suggested this was beef belly/short plate, but the challenge is how to cook it as 95% of recipes online say it's best smoked/BBQ'd but unfortunately I have access to neither.

We tried cooking 1kg into Filipino Tapsilog (fried marinaded beef), but it wasn't great – too fatty/gristly with not enough meat

Can anyone suggest a recipe for what we can do with it?

    Crispy pork/or glazed pork not sure on the recipe haven’t made it yet really want to can get the glaze or make it. For crispy might be harder

    I would cure with salt and sugar for a day. Then braise covered with some aromatics and liquid for like 5-6 hours at 285-300 depending. Uncover at the end and blast it at 400 for another 15-20 minutes to crisp. Extra points if you make the liquid into a sauce after.

    If you can, press is after it comes out of the oven until cooled. It will be really gelatinous after cooking, pressing it and cooling will allow portioning if that’s what you want.

  8. I’d make an awesome glazed belly. Not sure if it would be as good as pork belly but I’d try either way.

    Crockpot for 12 hours on low with a dry rub. It’ll be delicious. Make tacos.

    Koreans slice this thin, it’s called cha dol baeki.

    Can use it for soups, bbq(pan fry) etc

    Otherwise, guiness pot pie or any stew is good

    For me, it’s too fatty. I would melt it down and use the tallow for cooking.

    I per se dont have any suggestions for the meat but i suggest getting a wooden cutting board, no microplastics, no bacterial culture growing in the cuts and it lasts longer

    You could make some delicious satay.

    Use kecap manis as a marinade with some lemon.

    The dip, don’t use satay but kecap manis chopped onions and tomato and generous amounts of lemon and thinly sliced kaffir lime leaves and chopped chillies.

    Eat with rice.

    You’ll get some great char juicy flavour and a little beef

    Thinly slice the rest for shabu shabu or hotpot.

    Dice into 2 inch cubes, slow cooker (or sous vide if you can), cool, then under the grill to crisp up.

    oven bake or boil and then smear with garlic and bbq sauce then sear in pan

    Braised it in a dutch oven or freeze and slice for hot pot.
