



I woke up needing pancakes. These fixed my craving, and were so filling! Not perfect MD, depending on how much dairy you eat usually 🤔I have labelled them close enough. Recipe makes about 5 pancakes.
50g rolled oats (I found quick oats slightly better)
110g cottage cheese
1 egg
1tsp baking powder
1tsp vanilla extract
1tsp maple syrup
1tbs milk
Put in blender or processer until blended, I like mine to be not completely smooth. Cook on med low heat on non stick pan. I covered them to help them cook but might just take longer without a lid.

Aw this inspires me to do something similar! Only differences will be that I’ll exchange extra firm silken tofu for cottage cheese, use soy milk and already pre ground oats. Because both things are in hand in my kitchen and I’m very low dairy. Might try it with a little yoghurt though, for extra acidity. Such a nice idea, and like you there are days where there MUST be pancakes….
So Mediterranean. Especially the maple syrup.
