🌽 Aztec Pie (Mexican Tortilla Casserole) with Green Salsa & Creamy Chicken
🥣 For the Green Salsa:
• 1 jar (16.7 oz) Serrano Chile Gourmet Salsa (La Costeña)
• 1 roasted poblano pepper
• Fresh cilantro to taste
• 8 oz cream cheese
• Salt to taste
Blend all ingredients until smooth and creamy. Set aside.
🐔 For the Filling:
• 4 cups shredded cooked chicken
• 2 cups corn (fresh or frozen)
• 2 roasted poblano peppers, chopped
• ½ onion, diced
• 2 garlic cloves, minced
• Salt to taste
Sauté onion and garlic in a bit of oil until fragrant. Add poblano peppers, corn, and chicken. Season with salt and cook for 2–3 minutes. Set aside.
🧀 For Assembly:
• 12 corn tortillas
• Canola oil for frying
• 1 cup requesón (or ricotta)
• Quesillo (or mozzarella), shredded
Lightly fry the tortillas until soft (not crispy). In a baking dish, layer:
1. A spoonful of green salsa
2. Tortillas
3. Chicken mixture
4. Dabs of requesón
5. More green salsa
6. Repeat layers
Top with shredded quesillo or mozzarella. Bake at 375°F (190°C) for 20–25 minutes or until bubbly and golden.
lasagna with tortillas instead of pasta yes it’s a thing have you ever heard of pasta or a pie i’ll read you in the comments it’s kind of like the Mexican version of lasagna and the secret that makes it unbelievably delicious it’s in the creamy salsa so start by roasting your publanos peel off the skin remove the seeds and slice them then sauté onions garlic corn publanos and shredded chicken the sauce is where the magic happens therefore it’s going to be taken seriously in Mexican that’s why I’m starting with this Serrano gourmet salsa for the base chef’s kiss and of course I’m adding a few touches to give it that amazing aic pie flavor next fry the tortillas until soft and now it’s time to build our aic pie in a baking dish we’re going to layer salsa tortillas chicken reason or salsa and repeat until the dish is full top it all off with plenty of casillo and bake now I wish I had a picture perfect final shot to convince you to try this cozy Mexican dish but I have something better real life i couldn’t film a pretty closing scene because my family absolutely refused to wait for it to cool down they were hovering around all day sticking their fingers in my food so the second it came out of the oven they devour it sometimes real life wins over social media and sometimes that’s the best proof that a recipe is worth it [Music]
