This is my version of flatbread. It’s a Middle Eastern recipe. With these doses, you’ll be able to make up to six servings. I’m not claiming this is an original recipe. This is just an adaptation, my version of it. In Italy, we have Padin, very similar, but they are made differently. I always make them if I have an empty fridge, but it’s also ideal for a tasty and quick appetizer. For six mediumsized servings, you will need 2 and 1/2 cups of flour, 5.3 oz of Greek yogurt, like a standard yogurt size, one spoon of olive oil, and six tablespoons of water. Mix all the ingredients in this order in a big bowl and mix with a regular spoon until you make a smooth bowl. Cut it in six pieces. And then you can start flattening each piece with a rolling pin. Use flour if needed. Once each piece is about 8 to 10 in in diameter, you can cook it on a preheated pan. Medium heat for 1 to 2 minutes each side. You know it’s ready when bubbles start to form. Here I garnish it with Greek sauce, cucumbers, feta cheese, tomatoes, spinach, deli meat, and balsamic vinegar. I also like to garnish it like a brusqueta with olive oil, sea salt, and tomatoes.
