I made s’mores cookies with sourdough discard

Not sure how often cookies are posted but I just wanted to show off my current bake. I am so proud of them. Last time I made them the marshmallow were a melted mess (the pro tip is to freeze the marshmallows for a bit!)

The changes I made i put a strip of graham cracker to act as structure for the cookie and placed a half of a big marshmallow on top and torched it for some color!
