Enjoy this traditional Greek chicken lemon soup. Αυγολέμονο!
Warm yourself up this winter and get rid of any flu symptoms. Easy to follow steps that anyone can make.
Hi everyone. Today we’re going to make a chicken soup, a Greek chicken soup. It’s called a lemono. So I’ve got the chicken, the whole chicken in there with water. And I’m going to place one big brown onion, large onion. And that’s just for the onion to infuse in there. That’s going to come out later. And then we’re going to place a bit of oregano. That much. three chicken stock cubes. So, the water’s already cold. It’s going to come to the boil. Some olive oil, a bit of Celtic salt. We might put more Celtic salt later to taste. For now, that’s plenty. And just some cracked pepper. I’ll put plenty cuz it’s a big casserole. And that’s it. Now I’m going to just close the lid and let it come to the boil. So now it’s come to a nice boil. And we’re just going to lower the heat to a low simmer and cover the casserole. So, after the chicken has been boiling for about an hour or more, we’re going to take it out firstly. It’s going to probably fall apart because it’s been cooking nicely for a while, but that’s okay. We’ll get all the pieces out. Here it goes. Lucky didn’t fall apart. So, there’s our chicken. I’m going to let that cool down a bit before I start pulling it apart. And I’m also going to take the onion out. But before I do, I’m just going to squeeze it so all the juices come out and all that flavor is going to remain in the soup. [Music] That’s going to get thrown. And now I’m just going to add a bit more boiled water in there cuz as you can see, it’s dissolved. for making a little soup. There we go. So, I’m going to bring that to the boil. And once that comes to the boil, I’m going to place my rice in there. So, now it’s come to a nice boil. And I’m going to add two cups of this aoreio rice. And then I’m going to give it a good stir. I’m going to cover it and let that come to a boil. And while that’s happening and the chicken’s cooling down, I’m going to whisk some eggs, three eggs, and then I’m going to get four lemons. Well, these ones are small lemons. If you have bigger lemons, you can use two, depending on how lemony you want your soup to be. Just get all the juice out. So now the rice has come to the boil. We’re going to put it to a low simmer. Stir it. I’ll probably add a little bit more Celtic salt in here. As you saw, we added more water. That’s why. That’s it. And I’m just going to let that simmer while I get the rest of the ingredients ready. the lemon, the egg, and pull apart the chicken and leave this cook slowly. So, I’m just going to place the lid a little bit open like that. Otherwise, the water will overflow, gets all frothy, and all the water will overflow. It’s still on a low simmer. After we’ve whised this for a while. And it starts gets a bit frothy. Now we start slowly adding the lemon. Keep whisking. This time around I I didn’t have to get the pips out. There was no pips. So I kept the pulp in there which will make it more lemony. So, you can see our rice is ready. And now we’re going to turn it off. And then we’re going to start getting some of this juice. And then place it gently in the egg while you’re still whisking. You want to keep whisking so the egg doesn’t cook. The faster the better cuz you’ll get more froth. Try not to get the rice in there, just the liquid. And you’re going to do this until you make this consistency, warm to hot, cuz then you’re going to place this egg and lemon in the pot. So you want this to be the similar consistency so it doesn’t cook. The egg doesn’t cook. So you can see how froy this is. And it’s quite warm and hot. And now I’m just going to pour this in. But while I’m pouring it, I’m going to keep stirring. Remember, we don’t want the egg to cook. Keep stirring. And now, as you can see, all the shredded chicken. I’m going to add all that in there. And give it a good stir. Make sure you stir it very well. So that froth kind of dissolves in there, but it will still be there nice and thick and frothy, but you don’t want it all sitting at the top. So you’re going to give it a good stir around. And that’s your chicken. It’s ready. And if you let it sit a bit longer on its own, the rice will be even softer and it’ll thicken a little bit. And now we just serve it. And here is the nice delicious chicken soup. A lemono, a Greek traditional dish which you can enjoy throughout the year or now when it’s cold winter days or even when you’re sick when your family members or yourself have flu symptoms. It will warm you and also make you feel better. You can enjoy it with some crusty bread. And I like to enjoy this with some feta. Some people might not, but I do. Enjoy.
