




46oz Washugyu NY strip. Seasoned with red Alaea Hawaiian salt and vacuum sealed for 3 days. Smoked with apple wood and hickory chips on indirect heat (around 300 degrees) until internal temp hit 105. Rested for nearly 30 minutes until temp stopped rising at 127. Got a cast iron ripping hot and seared it for 3 minutes per side, flipping every minute. Rested another 15. Final temp 130.

Thats a thick boy right there. Where I live, the high quality steaks are either cut in really thin pieces or you have to buy a whole frozen roast and saw out pieces yourself. The one you have there is the perfect size (and level of marbling).. What did it cost you? by the way the cook is on point. Great job
