These meatless Mediterranean style stuffed peppers are so good, even the carnivores in your house won’t miss the meat. Start by cooking the barley and broth until it’s tender and all the liquid is absorbed. Saute the onion and garlic until soft. Stir in the spinach, chickpeas, sundried tomatoes, olives, diced tomatoes, oregano, and red pepper flakes. Once the spinach is wilted, add in the cooked barley, feta, parsley, basil, lemon, and then salt and pepper to taste. Generously stuff the peppers and then drizzle with olive oil.
