100 dips in 100 days. Day 54. This is the Italian banya cauda, which I begin by blending 20 garlic cloves. Yes, 20. I then gently sear this in some extra virgin olive oil, being careful not to brown it. After about 10 minutes, I add some blended anchovies. Cook this on a low heat until it all comes together. Then add your butter. And I mean a lot of butter. Enjoy, my friends. I’ll tell you what, I won’t be kissing my wife tonight. That’s for sure.

  1. 20 garlic cloves? Are you secretly trying to improve the sales of mouthwash and Extra.

    These dips need to be categorized by their flavour and intensity profiles. I think this one would score a 10 for both flavour and intensity.
