Austen is a super private person but I have been waiting to film something like this for him. He is such a star in the kitchen and shows so much love to friends and family by cooking for them. He was a bit hard on himself filming this because he thought it wouldn’t be perfect but it was amazing and I’m just happy that he enjoyed the experience!! I’ll probably incorporate this into vlogs more vs stand alone but ENJOY. Cooking is fun 🙂

[Music] [Music] [Music] Welcome to the kitchen. Got stuffed zucchini flowers. We’re going to stuff them with uh spiced ricotta and some herbs. Um then we got some papel. We’re going to do like a broccoli rob penetta and pea after. So, I have this for the starter and that’s for the main. So, I’ve got like a cup of the vicotta mix in here and I’m just going to gently open up the flour. What happens when you have a little on the side? Just a little extra cheese. Okay. Never hurt anybody. Never hurt anybody. Little snack. Got these. Ready to dredge. So, I just take turns dunking them in. Giving them a little roll. What about the tips? You going to Are you just going to paint it? Paint it. Not too heavy. How long do you cook them? About a minute. 30 seconds on each side. They look a little scary. First batch coming out a little crispy. We’ll see. But there’s a good uh You can hear it. The final product here. Just doing a little garnish with some Sicilian lemon salt. Let’s taste test. Going to get this guy. No, this guy. I’m going to try it a little bit. No dip for us today, but that’s okay. Perfect texture. Super light. Mhm. Even lighter than it looks. Yeah. So, we’re going to do a little bit of a forbidden mix of Italian pastas. One’s the typical peas with panchetta. We have that rendering right now. And the other one is the sima, which typically has a little bit of chili. We’ve got two types right now, but we’re going to do that with a paparell cuz we have paparell. So that’s what we’re going to do. Normally it’s orete, but now it’s paparell amore. [Music] [Music] We got We’re taking a little bit of the starchy pasta water out from the papadell. We’re spooning it into here. This will become part of the sauce. Going to test this one. A dente. So, we’ve got the base of the sauce here. This is the liquid. We’ll put in the penetta and then the pasta will be ready to get tossed in. How about these coming last item. item. Last thing to taste test. It is so hot in here. Austin really, really went to the nines with this one. [Music] That’s really good. I like the hodge podge. I don’t mind the mix. The mix up. You’ll allow it. Mhm. It’s really light.
