
Did my second reverse sear on the egg last night with some filets. It was so good that I forgot to take a picture until I was a few bites in.
First time I did this, I smoked it at 250ish for 45 minutes with some cherry wood. I felt like it had WAY too much smoke on it.
This time I went with apple wood and bumped my temp up to 275 and I was super happy with what I ended up with. My wife however preferred the 1st one.
Anything out there that y’all have done that’s fun and interesting? This one is in my top 3 favorites so far.
