I did these baby backs on my new Pit Boss Lexington. Did 275 for 2 hours unwrapped, 1 hour wrapped, and 15 minutes with sauce at the end. The grill temp was reading up to 295 at some times so I’m thinking that may be why they finished so fast. Checked them with an instant read thermometer and the bend test. They tasted great so no complaints from me
