Always loved cooking, and appreciated grilling. Never was a griller myself. Little bro got me a Weber Kettle, chimney, and a utensil set for my first Father’s Day. Now I’m thinking about what I want to grill while I’m at work every day. The convenience and low maintenance of this setup has turned me into a grilling addict.

So far I’ve ripped some burgers (frozen and homemade patties), dogs, brats, wings, veggies, and corn. Also grabbed some steaks to try things out with and they came out awesome. Favorite thing has been the grilled wings with a homemade Carolina BBQ sauce that my buddy made for the 4th. Going to try and mess with smoking a pork butt one of these weekends with the Snake method. I’m so deep into grilling that I find myself hunting down different meats and grilling recipes to try.

Temping meat has to be the most important aspect of this setup. Made some burgers tonight and was stunned at how fast they came to temp. Also foil veggies have made me love veggies even more.

    Get yourself a vortex next. It is great for chicken wings and thighs. You can get some serious heat for searing with it also.

    My chimney is on the verge of falling apart and I got my grill like 2 months ago. That’s how much I used it. I keep the grill pretty clean tho.

    Lets talk steaks!

    Step one, buy the steaks the day before you plan on grilling them. Take them out of the packaging when you get home and salt them. 3x more salt than you are thinking. Google some pics, its called “dry brining”. Then put them on a wire rack/cookie sheet and let them sit in the fridge till tomorrow. A rack! Not a plate. They should have air under them, and obviously the salt, which is on both sides.

    On grill day, take the steaks out of the fridge and let them sit on the counter for an hour before you cook them. This brings them to eoom temp so when you cook you dont have raw inside, since it was 45°F in the fridge, and burnt on the outside.

    I coat mine in olive oil, then season with your fav steak seasoning. This step you could skip if you are “taste the meat” guy. …but Columbus didnt sail off the edge of the world to find A5 waygu, he was looking for spices. Lol, its a joke, but season the steaks!

    If you fill that chimney up to the top, every time. And dump it when the coals are white, every time. Then you will habe the same cook, same temp, every time. Consistency is important, dont save 50cents worth of charcoal because this cook is just 2 burgers, or whatever.

    Dump those white choarcoals on the left side of the grill, not the center. Then get some wood chunks. Hickory is my fav, mesquite is good too! I do 3 or 4 chunks that are around the size of my fist. Then steaks on the right side of the grill.

    That little 4 hole chimney in the lid, that goes over the steaks. Not iver the coals. Now you are basically smoking those bad mama jamas! I get thick steaks, 1 to 1.5 inches, whatever my butcher cuts them. But my butcher generally speacing does it the same every time. ….again consistency!

    You need a meat thermometer. Not anything expensive, but go nuts if your loaded! Mine is $15 or so. 10 mine a side on the cool side of the grill brings mine to around 120°F. Then 1 min a side driectly over the coals. Bring inside, and decide if you are a rest, or eat it hot kind of guy. I eat mine hot! But most people here would frown on skipping the rest.

    I shoot for 145, and for me its perfect! You may like more or less done obviously, but adjust your times. Stay consistent, and youll find what you like.

    Grilled fruit is legit. Pineapple especially, little butter and brown sugar at the end.

    Also grilled peach halves, same topping, with ice cream.

    Look at how simple this kettle is. But man is little guy fucking versatile. I absolutely love mine. I think a pork butt or ribs is the best entry to smoking. I’ve been straight obsessed with mine for almost a year now

    I thought it was so weird when i used my little charcoal starter like that the other day for the first time and the outside looked like it was literally cracking where the fire was heating up. I started wondering if that’s what it was actually for or if it was about to burn up. 😂 but all turned out well.
