Did you know if you chop an onion and in a pan melt vegan butter with olive oil, add your onion and garlic, pour in a boreo rice and stir to mix. And then a ladle at a time, add vegetable stock, stirring continuously, waiting for the liquid to absorb before you add your next ladle. Keep going until the rice is cooked and all the vegetable stock is used. When the rice is done, you can add in the juice and the zest of a lemon, frozen peas, fresh parsley, and a good helping of seasoning. Stir through for a few more minutes until the peas are cooked. Serve topped with a little extra lemon zest, fresh parsley, vegan parmesan, and black pepper. You’ll have a super creamy and easy lemon and pea rsotto that’s made with pantry staples. Perfect for the middle of the week. And of course, it’s completely plant-based.
