I keep seeing "I smoked some chicken ____" and I just know it had rubbery skin.

Cook it hot and fast and don't look back! Throw some wood in there for some flavor .. it'll get it.. but, juicy chicken, crispy skin is hot/fast.

    Just off vertical to the coals for me. Get the heat without the flare ups. After the coals settle, I can crisp the skin directly over the coals without flare ups.

    Hit and fast if you marinate for a day. Meat is great then.

    Ah, but you can smoke it and then flash it over the hot coals after and still achieve crispy skin.

    That’s what I do. Extra smokey and crispy.

  4. I agree. Hot n’ fast with just a hint of smoke from mostly briquettes and a lump of wood.
