Kicking off my soup series with a classic Italian wedding soup! It’s so hearty and filling. I used ground turkey to make it a little lighter since there is lots of good pasta and veggies! A must save!

-for the meatballs-
1.5lb ground turkey (or whatever meat you want to use)
1/2c parsley, chopped
7 garlic cloves, minced
1/2c Italian style breadcrumbs
1.5c parmesan cheese, grated
1.5tsp beef bouillon
2 eggs
1tsp salt and pepper
2tbsp olive oil – for frying
-for the soup-
2tbsp olive oil
2 carrots, diced
3 celery ribs, diced
1/2 yellow onion, diced
4 garlic cloves, minced
3oz tomato paste
10c chicken broth of your choice
Rind of parmesan cheese
1tbsp chicken bouillon
1.5c acini de pepe pasta
2 bunches of spinach, chopped

Combine all ingredients for meatballs and roll into balls. Heat oil on medium and fry meatballs until golden on all sides. They do not need to be cooked through as they will finish cooking in the soup. Set aside. In a dutch oven/stock pot on medium heat, heat olive oil and sauté carrots, celery and onion until tender (~5 minutes). Add garlic and cook another minute. Add tomato paste and cook until combined into veggies (about 1-2 minutes) and it warms up. Add chicken broth and bring to a boil. Once boiling, add meatballs and pasta, cover and put on low for about 10 minutes or until pasta is tender and meatballs are cooked through. At the last minute, add spinach and cook for 1 minute. Welcome to my new soup series where I show you guys how to make all of your favorite soups right here in the comfort of your own home. I’m kicking off the series making a classic Italian wedding soup. You’ll start by rolling your meatballs and browning them. I use ground turkey for this recipe just to make it a little bit on the lighter side. Once those are done, you’ll take your vegetables and give them a good sauté with some garlic. Add in a bit of tomato paste and let it cook down until it gets nice and warm. Add in your favorite chicken broth, some seasoning, and a little rind of cheese. I love to add my chicken buan just for a little bit of saltiness. Once your soup is boiling, you’ll add in your pasta and your meatballs. Cover it and let it cook until nice and tender.
