The combination is steaming your meat. Chances are this will be well done shoe leather when youre done 🤷♀️
If you salt your meat 12-24h in advance, leave the meat on the counter, uncovered, for 60-90min before cooking(I often season with the salt OR when put on the counter)….THEN get your pan screaming hot….add half at a time

I do the same thing but I use a ripping hot cast iron skillet after marinating for 12-15 hours . This just looks like dog food.
