You are going to love my recipe for chicken marsala. I took two boneless chicken breasts, cut them in half. I’m going to pound down all four pieces, then season on both sides with salt and pepper. For my dredge, I just combine flour with salt, pepper, garlic powder, and paprika. Go ahead and dredge the chicken. One thing I recommend when you’re making this recipe is to have everything prepped ahead of time. Once the oil is hot, go ahead and drop in a few tablespoons of butter. I can only do two pieces of chicken at a time. These are going to fry on one side for about 4 to 5 minutes. Go ahead and flip. Then I’m going to finish the other two pieces. While those are going, I’m ricing my potatoes for my homemade mashed potatoes. Adding in some warmed cream and butter. And just stir until smooth and creamy. Once the chicken’s done and fully cooked, remove it from the pan. I’m going to add in my mushrooms. Now, I do do a lot of mushrooms here. These are going to cook down for about 4 minutes. Add in minced garlic, shallots, salt, pepper, fresh thyme. Another few minutes. Sprinkle with flour. I like my Marsala sauce to be a little bit on a thicker side. Then delaze with Marsala wine. Scrape up all those bits from the bottom. Pour in beef or chicken stock. Let this simmer for a few minutes to thicken. Finish with a few tablespoons of butter, fresh parsley, then nestle in the chicken. Let it warm through. But I mean, doesn’t that look incredible? I’m serving this tonight with steamed green beans, those creamy homemade mashed potatoes. Place the chicken, then spoon on more of that yummy Marsala sauce. Finish with fresh parsley. The chicken was cooked perfectly. It was so incredibly tender. You’ve got to try this chicken marsala
