TOFU CHILI
(serves 4-6 people)

INGREDIENTS
1 T olive oil
2 cloves garlic, chopped or minced
2 large carrots, chopped
1 large onion
1 green bell pepper, chopped
1 lb extra-firm silken tofu, cubed“
2 (15 oz) can beans (1 can each black and red kidney, or whatever you prefer
1 (28 oz) can diced or crushed tomatoes
1 t ground cumin
1 t chili powder
¼ t red pepper flakes
Seasoning salt
Salt and pepper

DIRECTIONS

Heat oil in a deep skillet or Dutch oven over medium-high heat. Add the onion, bell pepper, garlic, and carrots. Sauté until the onion is soft, about 4–5 minutes.
Stir in the tofu and continue to sauté for another 8–10 minutes, allowing it to lightly brown.
Add the beans, tomatoes, chili powder, cumin, and red pepper flakes. Bring the mixture to a boil, then reduce the heat to low and simmer for 30–40 minutes, stirring occasionally, until everything is cooked through and flavorful.
Season with salt and pepper, and seasoning salt to taste. Serve hot—cornbread on the side is highly recommended!

  1. As a male, I would have to substitute soy for animal protein, and drain the soybean oil from the cans of beans and substitute a non-seed oil, so it won't increase estrogen, while lowering testosterone. Better recipe for men 50+ 😉 ; )
