Out of the many brands of chorizo out there, this is the only one worth buying – Reynaldo Premium Cured Pork Longaniza (look for the pic of the grill). Reynaldo sells other kinds but they’re not good. Many brands sell a sloppy mess in a tube, where as the pork longaniza is firm and breaks up into little chunks once cooked.

While we’re on the same topic; a carnicería doesn’t normally sell chorizo seco, but if they do, buy 1/2 a pound and try it. Dried chorizo is the only kind worth buying but it’s a hit or miss because every carnicería has their own recipe. There’s an abundance of Mexican stores where I live but I have only found 2 places that are worth buying a pound of chorizo seco. When I’m in the mood for frijoles charros, papas y huevos con chorizo, seco/dried chorizo is the way to go.
