Fajitas w/ leftover pork roast, 2 CSA veg medleys + protein pudding for some long ass workdays

    3 weeks into my CSA (local farm box) and am having a lot of fun tackling new veg and combining them. Prepped a bunch of different components and packed a couple modular lunches.

    Leftover pork roast – rendered the fatty bits off for a bit in a skillet with a lid then added thick sliced bell peppers, fiesta seasoning. Tossed in the pork slices after about 6-7 minutes and continued to cook with the lid on, steaming the meat back warm

    One roast pan is paddy pan squash and fennel, drizzled with olive oil and an Italian herb blend. The other is a rainbow carrot and zucchini vibe with some mustard powder and herbs de provence.

    Protein pudding = half a tub of oikos high protein green yogurt and one scoop of protein powder.

    Banana for scale (also potassium)
