    Can I ask a couple stupid questions (from a very much non beginner)?

    What hydration do you start with?

    And what is your process with shaping in terms of adding flour?

    I always learned to use water to shape and reduce stickiness. Which is great, but it makes dough really slick and not necessarily taught like this. Im just curious for a better shaping technique because im not sure mine is working for me.

  11. I do the fold and roll but never tried pressing too. Need to do that. Next time.

    I have an erection. I probably spend a good 5 minutes shaping. Even at that, sometimes I don’t feel I’ve built enough tension and go back 20 minutes later for another attempt.
