
Took a vacation that ended up being a guys trip, work trip, and family get together over the last 3 weeks. I planned to cook at least once so I packed my portable vacuum sealer and Anova cooker in my bags.
When family and friends heard that I had brought my equipment to cook, they all asked if I could cook for them too. So I made a few Costco runs and bought a total of 6 roasts, trimmed them up, sealed them and then froze them until their respective cook days.
Bathed them from frozen for 6 hours and then finished them at their respective venues (oven broiled, cast iron, and over the fire) right before serving. Everyone had tons of questions about the process and were very complementary on the finished product (including a catarinense who I had no idea would be at the work event, and I got a little nervous when I found out they were coming and I was cooking their nations famous steak).
This still reigns as king of steaks and is an incredible crowd pleaser. Don’t sleep on it!
