Surprised with how well this came out, and proud of myself for using up bits and bobs rather than ordering out!

  • 1/2 container Trader Joe’s Greek chickpeas with parsley and cumin
  • 1/2 cup shelled steamed edamame
  • 1/2 roasted red bell pepper
  • 1/2 avocado
  • 1 handful microgreens
  • Side of bread 😋

    People who reduce food waste and save money/eat healthy by using up all the scraps in their fridge are the real heroes! This impresses me more than someone cooking an elaborate recipe from a cookbook with 20 premium ingredients and posting an almost professional-looking picture. I wanna know what you did with the leftover ingredients!
