- 1/2 container Trader Joe’s Greek chickpeas with parsley and cumin
- 1/2 cup shelled steamed edamame
- 1/2 roasted red bell pepper
- 1/2 avocado
- 1 handful microgreens
- Side of bread 😋

This looks like an easy lunch!!!
People who reduce food waste and save money/eat healthy by using up all the scraps in their fridge are the real heroes! This impresses me more than someone cooking an elaborate recipe from a cookbook with 20 premium ingredients and posting an almost professional-looking picture. I wanna know what you did with the leftover ingredients!
