This plant grew from seeds and produced a few peppers which I already harvested
Now there are a few new young stalks growing at the bottom, which I believe to be new plants
The older plants got really thin and tall, with just a few leaves on top. They are also not producing any more peppers
Should I just trim the old plants down to the same level as the young ones to "free up" the spaces for the new ones?

You shouldn’t trim them
No! You would just be killing the growth.
Everything looks pretty spindly – are they getting enough light and fertilizer? This could also be because you appear to have many pepper plants in 1 small pot. That pot might be big enough for 1 plant but definitely not 5-6
