Wish I could have gotten a little more char but only had access to an old gas grill. Decided to cook it at 2 hours at 131, let it rest in the fridge for 20 minutes and sear.

    Also I think 🤔 I was thinking ribeye which has more fat! Either way it’s nice to see an update post! The best would be if his image included a cut piece so we could see how the inside looks! But it’s his first time so we should give him a pass 🥰
