I made a pumpkin cake because pumpkin purée is my daughter's absolute favorite food lol. Pumpkin spice cake, brown butter American buttercream frosting, and salted caramel filling. Powdered sugar sifted on top. It was DIVINE! Will make this again in the autumn! It wasn't the most spectacular presentation I've ever done for a cake, but I still think it turned out really nicely. I would even make this again with just one cake layer.

    Would cake again!!! What a great combination. Take a look at how Milk Bar bakes their cakes. You make it in a sheet pan so it’s flat, then you cut out the circles for the layers. You’ll end up with flat layers. Read how they do it!

    **Brown Butter Frosting**
    – 8 oz unsalted butter
    – 3-4 cups powdered sugar, sifted
    – 1 tsp vanilla
    – 1/4 tsp fine sea salt or kosher salt
    1. Prepare an ice water bath by filling a large bowl halfway with water and ice cubes. Have a second small bowl and whisk ready to go. Ensure that the smaller bowl can sit in the ice bath without water spilling into it.
    2. In a small or medium pan over medium-low heat, brown 8 oz unsalted butter until nutty & fragrant. Remove from the heat immediately.
    3. Pour the browned butter into the small bowl, then place the bowl into the ice bath. Whisk vigorously to cool the mixture evenly until it reconstitutes. When the mixture becomes fluffy and holds peaks, but isn’t stiff, remove it from the ice bath.
    4. Using a hand mixer, add in salt and powdered sugar, one cup at a time, until frosting reaches your preferred stiffness & sweetness. Add in vanilla. *Optional: add in a few tablespoons of cooled caramel sauce to add in more nuanced flavor.*
