Salted and peppered it two hours before cooking. Let it get to room temp before cooking. Didn’t do anything fancy, just the grill on super high heat for the sear, then lowered the heat for the rest of the cook. Flipped it every 3 minutes. Was going for medium rare and I think I nailed it.

    It takes skill to cook something that thick that evenly. A lot of people would either burn the shit out of the outside and they’ll be raw in the center or just overcook it. 10/10 👍🏼
