Brought this from home ($50 corkage) to Prime Steakhouse at Bellagio in Vegas to celebrate my anniversary. My first Chave – just perfect. I know this is a bit early in the drinking window but reviews generally say the ‘14 is ready sooner than most other vintages. I have a second bottle will keep for several more years.

The somm immediately commented on the meaty bacon nose which was spot on. TBH it paired better with the table side smoked maple bacon than the steak (though was sublime with both).

I expected at this young age for tannins to overwhelm and need time to decant but was excellent immediately and peaked after only 30 minutes. Struggling to put into words what made it perfect wine for me (but I’ll try)

Polished completely integrated tannins with an ethereal quality. Just a hint of black fruit with smoke and subtle pepper. I guess past its primary phase? Crazy long finish. Could be my fav bottle ever which sucks as it’s $$$$
