This is my oven — I set it to 300°F, and I usually bake two trays at once. But my macarons always end up browning too much. Could it be because of how the wire racks are positioned? The macaron photo I included shows two shells from the same tray, and if I take them out any earlier, they’re still undercooked.

    Set the metal racks in the middle and then put 1 tray only on it. No more than 1. Remove other metal racks in the oven.

    Don’t be afraid to test other temps. My oven runs hot so I set to 285°. Do you have a thermometer to test for hot spots?

    With convection you probably can bake at 250F. Next is your baking tray. Black tray is known to brown quicker and if the non stick coating is ceramic, then it will conduct heat much faster than other coatings.

  4. Do you have an oven thermometer you can put inside the oven? It might be worth checking your actual oven temp. Ovens can often have different temperatures to what you set them. Also, let it preheat for at least 20 minutes. It will make sure that your oven is evenly heated and you minimise hot or cold spots.

    How long do you bake them for?
