It’s just oxidation from part of the meat being exposed to air

Ground meat would look lifeless and gray but they treat it with carbon monoxide to keep it bright red for as long as possible.

I own a grocery store and have been ask if we wrapped old meat with fresh meat. Lmao.

It’s fine, won’t make you sick or anything. But I will say it’s a sliding scale. If your meat was 90% that color? It would taste worse. If it was that much, but a darker gray? It would also taste worse. Just keep that in mind. If you smell it and it doesn’t make you gag it’s probably fine

  5. Completely normal. The beef in the middle hasn’t been exposed to as much air as the exterior, so they oxidize at different rates.
