Wanted to sear in my cast iron but the bone didn't fit so we went with butter in a non-stick pan. About 1 min each side max
Rest 7 minutes

    Looks good. I préfère to pass i slight hand with oil on the meet & grill it  at 200 and on the end salt pepper & some aromatic herbs
