Saturday means fresh produce is coming from the farmers market. And this is everything I prepared for Saturday’s service. Before starting any prep, we consolidated, labeled, and put away all the produce. Then I started the day by milling rice for the jeweled saffron rice and stored the rice brand because nothing goes to waste at our restaurant. Then I made two quarts of the roasted yeast dressing and prepared all the veggies to be charred by the grill station after family meal. This is what they look like after being charred. I also made a quart of the yuzu kosho dressing, portion 10 orders of the rice, and scrubbed for the first breakdown. After family meal, I thinly sliced peaches for the peach and long bean salad. And we have a new dish on the menu, which is melon with white strawberry kimchi. This strawberry kimchi tastes like gakugi, but with a texture in between radish and strawberries. We also crack all the walnuts, and I like using a lemon juicer to do this. We also got a ton of garlic from the garden, so I’ve been peeling them since yesterday. And I actually think this is pretty therapeutic, but hate the smell that lingers on my fingers.

I've never seen strawberry kimchi before! I'd be interested in a recipe or one similar to it (not wanting to pinch the restaurants recipe if they made it). Just very curious how the strawberry would play with the other flavours of kimchi

I can tell you guys aren’t that busy just by the way you prep. Place with volume, you’d never catch them HAND peeling anything. That’s something you do to make your 8 hours.

Peeling garlic is just a reminder that we are made of meat and susceptible to being marinated.
If your fingers smell like garlic you can rub a bit of toothpaste between your fingers and that really does get rid of the stench
