Last week I tried to mealprep which felt frustrating. But now with some experience on hand making this one felt much more smoother!

    The left is a pork tacos filling and right is bunch of ingredients I had on hand to make a protein rich meal!

    We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

    Recipe:

    Thai Green Chicken Curry with Rice (3 Portions)

    Ingredients:
    • 300g Basmati rice
    • 2 tbsp Thai green curry paste (store-bought or homemade)
    • 1 tbsp homemade Thai style spice mix (see below)
    • 360ml Coconut milk
    • 2 tsp chicken stock paste
    • 480g Chicken breast (sliced in cubes)
    • 1 Lime
    • 100g Peas
    • 100g Baby spinach
    • Salt, pepper, oil, and water as needed

    I don’t have much instructions as I simply gradually added an ingredient that made sense to add at the time. But these are the measurements!
