hello everyone welcome to my kitchen it is Colleen here and today we are going to make Greek lemon chicken orzo soup so we have six cups of chicken broth here and we are going to bring it up to a boil our chicken stock is boiling so now we are going to add 1/2 cup of orzo and you’re going to cook this 2 minutes less than what the package uh directions say so this orzo is going to cook for 7 minutes our orzo has been cooking for 7 minutes turned down the heat to low and now we’re going to get ready to finish off the soup so in my bowl I have two eggs and one egg yolk 3/4 of a teaspoon of salt and 1 teaspoon of pepper and you’re just going to whisk these together and then you are going to whisk in some lemon juice the recipe calls for five tablespoons um we found that was a little too lemony for us so I’m going to do three and then to this we are going to add let’s move some things around we are going to add one cup of our broth because what you want to do is temper the eggs be before you put them in the really hot soup so I’ve got about a cup here and we are going to just you have to whisk constantly did I say whis or whisk so this is tempering the eggs so it’s kind of precooking them before we put them in the soup now I should have probably gotten rid of some of the orzo you can see it in there that’s okay and now we are coming back to our soup and we are going to to put in our egg mixture and you also want to whisk this in constantly so we’re going to just start pouring it in and whisk it just like this then um we’re going to add hold on I’m trying to remember okay so we’re going to put in our chicken I was trying to remember what went next so this is about a cup and A3 of rotisserie chicken and my dogs are real excited right now I’m actually going to switch utensils so all this little chicken doesn’t get caught in my whisk so I think I’m just going to use an old mix and scraper here so we’re going to stir in our chicken and then we are going to put in our vegetables a cup and a third of peas and carrots now it calls for frozen I didn’t have I only have frozen peas so I had a few leftover carrots so I cut those up so the carrots are fresh the peas are Frozen the whole purpose of this recipe is to have this be as simple as possible so rotisserie chicken orzo your chicken stock frozen veg you can do fresh if you want but it is a super simple recipe to make it’s got the orzo in there this is going to heat through maybe another 5 10 minutes just going to keep an eye on the temperature and then we have our super duper Greek lemon chicken soup thanks for watching you guys are always welcome in this kitchen
