Ingredients for 2 people:

🔥 Roasted Cherry Tomatoes:
• 1 cup cherry tomatoes (about 20)
• 3 garlic cloves, smashed
• 3 tbsp olive oil
• Salt & pepper to taste

🌿 Pesto (makes extra for dipping or another meal):
• 2-3 small garlic clove
• 1/4 tsp salt
. •1/3 cup basil
• 2 tbsp pine nuts
• 1/4 cup olive oil
• 1/4 cup grated Parmigiano Reggiano

🥖 For the Sandwich:
• 1 small baguette or 2 demi baguettes
• 1/2 cup fresh arugula
• 2 balls of burrata cheese (4 oz / 113g)
• 1–2 tsp Calabrian chili oil (adjust to taste)
• 2 tsp balsamic glaze

🥪 Instructions
1. Roast the Cherry Tomatoes:
• Preheat oven to 400°F (200°C).
• Toss tomatoes and garlic with olive oil, salt, and pepper.
• Roast for 30-40 minutes until soft and slightly blistered.
2. Make the Pesto (by stone or blender):
• Mash garlic and salt together first.
• Add basil, pine nuts and grind/blend until paste forms.
• Gradually drizzle in olive oil while mixing.
• Add Parmigiano and mix until smooth.
3. Toast the Baguette:
• Slice baguette in half, then toast each half in a pan with a bit of olive oil until golden( or in the oven for 5-7 minutes while roasting tomatoes ).
4. Assemble:
• Spread pesto on toasted bread.
• Add arugula, then burrata on top.
• Drizzle with Calabrian chili oil, pepper.
• Top with roasted cherry tomatoes and sprinkle salt.
• Finish with a drizzle of balsamic glaze.
