Pretty sure that’s mislabeled or it’s from the tail end of prime rib.

If those are ribeye, they’ve had the spinalis cut off. I hate it when they take the cap off of ribeyes, it’s the best part.

Those are NY Strips
grip_n_Ripper
Some Costcos will remove the caps and sell them separately. Not a fan.
Spinal_Soup
I see it’s costco, they like to cut the ribeye caps off and sell the caps rolled into pinwheels separately. These were definitely cut from the end of the ribeye that’s near the striploin so it basically is a New York strip at this point.
wigglin_harry
Imagine removing the caps and charging $24/lb
DropDeadDigsy
Still gonna taste amazing

Costco removes the best part (the cap) and also blade tenderizes their steaks.
Buy brisket from them not steak

Olawd! Is it time warped from the future?
GrajedaFrog

Thank god my Costco doesn’t do that.

Yes. The comments have it right. No cap. IMO It’s the best part
Trillhouse23
Are we really paying $24/lb for regular ribeye? Absolutely ridiculous
Historical_Hearing76
One is definitely a strip. You can even see one of the cuts with connective tissue(nerve/gristle) under the label. Anatomically that’s from the opposite end of the loin from the ribeye end cuts.
The bottom 2 look like end cuts from the ribeye with the Spinalis removed.

We have a meat market in Tyler Tx, that cuts your steaks in front of you. No packaging at all.
bread_suspicion
No spinalis dorsi muscle. They do it at my work too and I hate it.
One_Bicycle_1776
A lot of the people are saying they cut the spinalis off, but it’s actually the transition cut between the ribeye and strip. There will be a couple of these on each side of the cow, there’s no avoiding that.
