I'm making my second batch with the Cuisinart ICE-21, the strawberry from the booklet. It's been churning for about 20 minutes, and all the ice cream is clumped up on the paddle. The bowl is spinning just fine, but the ice cream isn't getting churned or probably freezing much more since it's not touching the bowl. I can push it down into the bottom and it churns for a moment, but clumps in the middle again.

It's softer than I'd like, so I'm putting it in the freezer for a while. But is this normal? Is this just what happens when it's gone as far as it can in the machine? Or is something wrong that I'm missing here?

    That is the point at which I know it is time to transfer to a container and sit in the freezer to firm up 👍

    Sounds like it’s finished. Ice cream straight out of the bowl will have a soft-serve like texture and melt pretty fast. It’s meant to be frozen overnight to harden further.

    It’ll firm up in the freezer just fine.

    I’d advise against trying to mash it down and make it churn more. That’s how I *over*-churned my last batch.

    I’d say you can up the volume of your recipe a bit.
    Using the same machine, I use 2 cups cream, 1 cup milk, 2/3cups sugar, vanilla , pinch of salt, touch of xanthan. Once churned yields about a quart.
