I was visiting my 93-year old mom in Japan and came back four nights ago. These are the dishes I cooked so far. I was dying to cook what I wanted to eat. Explanation as to what they are is in the comments.

    The first night, we had Somen noodles with Albacore tuna, home-grown Japanese cucumbers, tomatoes with dipping sauce, and green salad (lettuce, cucumbers and avocado.)

    The second night, I cooked chicken teriyaki, salad, cucumber pickles with cilantro with spicy Tobanjan, ground ginger and garlic and soy sauce. G

    The third night, we had fried chicken thighs seasoned with cilantro, ground ginger and garlic, shio koji and soy sauce), salad, cucumber pickles (I’m getting lots of Japanese cucumbers now from out garden) and miso soup (wakame, Maitake, green onion and ONE Okura from the garden😫). Bad thing about home garden is that we don’t always harvest enough of the same vegetable at once.

    Tonight’s dinner was curry rice with basmati rice (I used Java hot curry) and salad. I like splash of lemon juice and olive oils on my salad instead of using dressing. After dinner dessert was a store bought angel food cake, macerated strawberries and freshly whipped cream .
