Prime Flank steak on deck tonight. Just seasoned with salt, pepper, garlic and onion powder. Sou vide for a 2 hour swim at 135F. Seared using a flamethrower and avoided the dreaded gray band. Finished with some lime and finishing salt.

    I’ll take the grey band and a better sear. Especially for flank. With no fat you gotta get some flavor in there somehow!

    I can’t seem to enjoy flank – always turns out juicy and flavourful but ALWAYS chewy. Perhaps it’s just the cut not jiving with my preferences.
