Huuuuuge pot of pasta for my lunch and dinner for Mon-Wed ☺️

Since I made so much, I had some for my lunch today, topped with way too much arugula. First time trying Ajvar, it's pretty good and a nice change from the usual tomato based sauce or pesto.

Ingredients:
– 400g of tortiglioni (eyeballed that since I had a 1kg bag)
– 1 jar of Avjar (Store brought 😅)
– 1 block of Feta
– 2 bell peppers
– 1 eggplant
– 1 can of sweet corn
– 500g of cherry tomatoes

Diced the veggies the day before. Seasoned the bell peppers and eggplant with some olive oil, salt, pepper, garlic powder. Seasoned the tomato with tomato seasoning. Air fried both separately while boiling the pasta.

Added the Avjar to the pasta, crumbled in the Feta. Added all the veggies.

The arugula complements the dish really well. Also kind of amusing that Ajvar is made of mainly pepper and eggplant and then I added more pepper and eggplant 🤭 wanted zucchini too but it looked rather unappetizing when I was grocery shopping.

    Ajvar is one of my favorite things ever. You can add it Shakshuka, put it on a baguette toast like bruschetta or a tapenade.
    Make quick eggs in the morning.
    Add it to roasts, to home made marinara for more body and less acidity.
    So versatile!!
