This salad is getting a close enough for me:

  • pomegranate yuzu dressing
  • romaine
  • carrot
  • cucumber
  • radish
  • avocado
  • morada beans from Rancho Gordo (they are pretty purple beans)
  • croutons made from whole wheat pita, fried in grapeseed oil.

I do not make croutons often, and had saved this oil from a batch for a potluck. So i decided to just do one batch before tossing the oil. Baked would be do able for sure. But these were not too oily.
