This salad is getting a close enough for me:
- pomegranate yuzu dressing
- romaine
- carrot
- cucumber
- radish
- avocado
- morada beans from Rancho Gordo (they are pretty purple beans)
- croutons made from whole wheat pita, fried in grapeseed oil.
I do not make croutons often, and had saved this oil from a batch for a potluck. So i decided to just do one batch before tossing the oil. Baked would be do able for sure. But these were not too oily.
