Todays smoke. How do you guys smoke your tri tips?

That’s beautiful, but damn that’s expensive. Almost the price of a brisket where I’m at. But it sure is beautiful.

Basically a reverse sear with a smoker. Season with SPG, smoke on 225 until 120 degrees (about 2 hours or so), then sear in a hot pan with butter to finish. Rest for about 10 minutes and eat.

Smoke until 120f then sear until doneness of your liking.
Here’s how mine turn out. 225° until 120° internal, rest for 15-20 mins then sear on my gas grill for 1 minute per side. Alternatively you could also use a pan or your oven (broiler) to sear. I’ll also add it doesn’t take long to hit 120° internal, less than 2 hours. Also, give it a good trim especially along the bottom. I’ve trimmed almost a pound of fat from my tri-tips, because unlike a brisket it’s not going to be on the smoker long enough to render all the fat. Tri-tips has become one of our favorite meats to smoke. We serve it with either a horse radish sauce or chimichurri. Enjoy!!!
