Cottage Pie Inspired Filling with Rice

    Made a funky cottage pie inspired filling with rice (because I’m too lazy to make mashed potatoes). Please don’t judge 🙇🏻‍♂️ Just wanted to aim for a protein dish with sauce and rice!

    Preparation:
    – Diced up onions, carrots, and celery (2:1:1). I should have diced them more finely and also had way too many!
    – Minced garlic
    – Mixed up 50/50 minced beef and pork. Pork is more fresh from where I’m from ~

    Cooking:
    – Browned the minced meat first and removed
    – Added in diced onions/carrots/celery with minced garlic
    – After cooking for a while, add the meat back in with tomato paste, worcestershire sauce, salt, pepper, dark soy sauce 🧐, and chicken stock
    – Also added in edamame as my girlfriend isn’t a fan of peas
    – Simmer for 20mins ish, added some cornstarch flurry to thicken the sauce as I didn’t have flour to add in the beginning

    Why didn’t I ever consider rice?

    I will make it this week.

    I once turned Bolognese into a rice bowl and this is next on my list.
