[Music] Good morning and welcome back to Phenomenal Fridays. Start by spraying six regularsized muffin cups with cooking spray. In a small bowl, add 1/3 of cup of cambook eggs, 1/3 cup mixquick, and 2/3 cup of non-dairy creamer and mix well. In another small bowl, stir/4 cup each of chopped bell pepper, chopped mushrooms, sauteed onions, and Camroo cheddar shreds. Spoon one scanned tablespoon of the eggs mixture into each sprayed muffin cup. Then add a scoop of the veggie mixture to each one and top again with one more scoop of the egg mixture each. Add these to a 350° Fahrenheit oven for 30 to 40 minutes or until the tops of the muffins are golden brown. Let these cool in the pan for 5 minutes and then separate them from the muffin tin with a knife. After 10 more minutes of cooling, remove them from the pan. Serve with your favorite condiment or for a sweet and savory breakfast at a Camdrick blueberry breakfast bar. Enjoy.
