I made 8 of these–roast chicken on a bed of red quinoa and spiced cauliflower.

    And yes, I know it’s very brown/beige. It’s really good, though!

    I roasted the chicken on the bed of onions after marinating it with lime, olive oil, caper juice, black pepper, salt, and fresh grated garlic.

    The quinoa I rinsed and then cooked with some of the drippings from the chicken and plenty of salt. The cauliflower was cut fresh and then tossed with some neutral oil and smoked paprika, ground coriander, and cumin.

    I’m not a quinoa lover – don’t dislike it, just not a huge fan. However, I’d mess with this.
