Moved from the UK where I was spoilt rotten to Bulgaria where I’m just treated like I’m rotten for being vegan, so I’ve been having to make all the things I miss/ wish I could just order. Obviously cooking your own is always best, but I just want the option to be able to order a pizza or buy a hotdog every now and then 🥲 It’s a crying shame because the cuisine is super easy to veganise. Top dish for summer eaten here is ‘tarator’ – traditionally made with yogurt, it’s basically the love child of tzatziki and gazpacho, super refreshing light and tasty. A cold soup of shredded cucumber, dill, garlic, lemon juice… I add nooch. For a base instead of yogurt blend 200g (half n half) sunflower and pumpkin seeds with 2 pints of water. Chill in the fridge, thank me later.
