Half Dozen Blueberry Muffins (double for full dozen)
1 cup blanched almond flour
¼ tapioca starch
2 tbsp potato starch
1/3 cup light brown sugar
0.5 tsp xanthan gum
1.5 tsp baking powder
Dash of cinnamon (optional)
1 egg
2 tbsp agave/honey
2 tbsp olive oil
1 tbsp lemon juice
¼ cup warm water
Fresh blueberries as desired
Bake at 350 for twenty-five minutes
You’re watching how to bake gluten-free, dairyfree, grain-free blueberry muffins. First, one cup of almond flour. Make sure you use blanched almond flour and not almond meal as they work very differently in baking. Then, we have one4 cup of tapioca starch to hold things together. Two tablespoons of potato starch for fluff and 1/3 of a cup of light brown sugar. [Music] Since this is a small batch, I’m only using half a teaspoon of zanthan gum. And you could probably exclude this entirely. Now, 1 and 1/2 tesps of baking powder and a dash of cinnamon because cinnamon makes everything better. Keep in mind that if you want a larger batch of muffins or a full dozen, just double this recipe. Combine these dry ingredients thoroughly before adding the wet as follows. One egg. 2 tbsp of agave nectar or honey. I prefer the flavor of honey, but some people probably like it neutral and I’d recommend agave for that. 2 tablesp of olive oil for moisture and a splash of lemon juice just because it seems like a good idea, you know, and it kind of sounds fancy. Add about 1/4 cup of warm water and mix thoroughly again. [Music] Now you can fold in fresh blueberries. You don’t have to use a ridiculous amount like me. Start preheating your oven to 350° F. And then portion the batter into six muffins. [Music] [Applause] Let the muffins rest while the oven warms up. And once it is ready, bake them for about 25 minutes. Don’t be stupid like me. Let the muffins cool for at least 15 minutes. And not only will they hold together better, they also will not burn your mouth. Actually, I want to blend these muffin cups.
