    That top 50 is fierce. You probably did amazing considering the number of really tough entries in this comp. Your wings look amazing and I’d pay you to even try one of those. Beautiful color and sauce on the… So what did you do for these particular wings?

    I ran a competition bbq team for over ten years and let me tell you the points that separate top 50 to everyone else is appearance and so you could have scored taste and tenderness in the top 50 you have some appearance issues.

    I would have went all of the flats on one line and all of the drums on another. Taken some kitchen shears and cleaned up the top of the drums where that skin flap is. You have sauce all over your parsley between wings.

    I know these are super nitpicky but these are the little things I learned that claw those points back and can raise your score another level.
